Our main business is the commercialization of our partner's milk. We reach noteworthy quantities, approximately 150 million kilograms per year!

Speaking of milk, did you know that.....

​

Milk plays an indisputable role in the history of human evolution. In fact, modern human advancement began with the very first pastoral communities that, thanks to one of the first foods "offered by the gods" (milk, to be precise), was able to develop as a group, family, and society. Most importantly, however, by not having to constantly worry about gathering food supplies, it fostered intellectual and spiritual growth.

Milk is one of the natural foods that man chose for himself, both for its nutritiousness and for its readiness. Being something that is immediately ready to be consumed, it does not require any particular production processes or modifications to make it desirable.

Since ancient civilization, man has chosen, through trial and error, the best food for sustenance and we can find traces of considerable use of milk dating back to the Roman-Etruscan civilizations, as a part of the use and customs of the anthropological tradition.

This is a brief retelling of the history that began the tradition. It is precisely from here that man began to combine science and technology to assure a product that is always more safe and high in quality.

The regulations that exist in our country as well as our own personal choices have brought us to believe that scrupulously following scientific hygiene and health criteria to process cow milk, would allow us to guarantee and offer a safe product that is always more pleasant to the palate.

Precisely due to the transparency that we choose to have with our consumers, we include a small informational note regarding the production of the milk, in the hopes that this will serve to clarify any doubts about this precious nutriment that has been used for ages.

The cycle of milk

All the livestock that supply milk to our consortium undergo rigorous health inspections by the designated competent authorities to guarantee their state of health.

Health inspections are also performed to ensure proper milking procedures which must guarantee maximum hygiene and quality in each and every phase (performed by specialists of the consortium).

Milking

Up until not long ago, milking was done by hand. Today, with the development of technology, it is done with modern machines that allow for a high level of safety for the hygiene and health of the cows as well so that they aren't at risk of encountering dangerous health problems, with full respect to their biophysical cycle. Freshly-milked milk is preserved at a temperatures ranging from +39°F to +46°F, depending on the what it will be used for (ex.: fresh pasteurized milk, PDO like Grana Padano), whereas no refrigeration is needed for milk that will be used for the production of PDO Parmigiano Reggiano in accordance with the regulations.

Inspections

Every day our tank trucks collect the freshly-milked milk that is then quickly brought to the collection centers where it undergoes chemical and bacteriological inspections based on the types of analyses and the frequency with which they should be performed as foreseen by law.

Upon receipt, the raw material undergoes a series of tests (screenings), to further guarantee the quality.

The milk that passes all the inspections is then funneled into large tanks which will maintain the temperature necessary for the type of production it will undergo.

Milk production

The next steps concern the production of the milk which occurs in a completely organized and standardized manner. In fact, dietary technology has made the processes more safe for humans by allowing for an increase in the standards of quality. The production phases include a flow chart that is specific to each type of product.
