Sautéed porcini mushrooms with Bianco d’Italia

Procedure

Step 1

Clean the porcini mushrooms and slice them lengthwise. Cook them in a very hot skillet with a drizzle of olive oil.

Step 2

Sauté the porcini mushrooms briefly on both sides, then season with salt and pepper.

Step 3

Arrange them in a flower shape on a flat plate, top with shavings of Bianco d’Italia, and drizzle with traditional Modena vinegar.

Notes

Cook the porcini mushrooms over high heat to preserve their texture and flavor. Add the Bianco d’Italia at the end of cooking for a more delicate cream.
