Procedure

Step 1

Boil the spaghettone in a large pot of salted water.

Step 2

Pour the cream into a small saucepan and let it reduce slightly; then turn off the heat.

Step 3

Steep the Bianco d’Italia and blend everything together; the result will be a smooth, velvety cream.

Step 4

Drain the spaghettone, then toss it in a pan with the Bianco d’Italia cream and the fava beans.

Step 5

Once plated, add shavings of Bianco d’Italia cheese, pepper, and breadcrumbs sautéed in olive oil.

Notes

Stir the mixture off the heat to keep the sauce smooth and velvety. Add pepper at the end so as not to overpower the delicate flavor of the cheese.
